Risotto at my house

  • When most people think about Italian cuisine pasta comes to mind, but in Northern Italy Risotto is also very popular. In fact if one really wants to know Northern Italian cuisine they have to be familiar with risotto.

    I remember learning to make risotto from my father when I was only seven years old. The when my parents weren't home I would try to prepare it by myself I at that time I always made risotto with carrots.

    When I was growing up it was the preferred dish. On Sundays or if we had guests my mother and father were much more likely to make a risotto rather than a pasta. In fact during my teenage years my mother made rice or risotto so often that I sort of rediscovered pasta when I went to the University in Venice. After that we started making pasta more regularly, however we have never stopped making risotto. It's still the dish of choice for family gatherings and for guests.
