Biscotti for Wine - Biscotti da vin

This is a typical cookie from my region, Veneto. They’re hard cookies and as its name implies are best consumed dipped in sweet wine to complement their flavors.

Ingredients:

2-1/4 cups flour
2 eggs
3/4 cup sugar
1/2 cup finely chopped almonds
lemon zest from 1/2 lemon
lemon juice from 1/2 lemon
1/2 tsp. double acting baking powder
butter to grease the cookie sheet
pinch of salt

Instructions:

1. In a large bowl mix the dry ingredients.
2. Now add the lemon zest, lemon juice and the eggs.
3. Mix well until you have a nice dough. It will probably be a bit sticky.
4. Dust your hands with flour and roll the dough into tubes about the diameter of your index finger.
5. Cut them into pieces about 4 inches long and place them on a cookie sheet greased with butter.
6. Press them down slightly so they are no longer round but flat.
7. Bake for 15 minutes or until they start to turn golden brown in a preheated oven at 400°.
8. When done remove from the oven and let them cool.
9. Serve with Vin Santo, a sweet wine and dip them to soften them up.

Notes:

This recipe will make about 4 dozen cookies.
