Chocolate salami – Salame di cioccolato

I’ve been making this dessert since I was 8 years old and every time I prepare it it brings back memories of my childhood. Chocolate salami is the dream of any and every kid. It’s really easy to prepare and it’s also one of those dishes you will enjoy making with your children.

Ingredients:

2 egg yolks*
2 Tbsp. sugar
2 Tbsp. unsweetened cocoa
1 Tbsp. Rum or milk
3/4 cup butter
7 oz. dry biscuits, like graham crackers

Instructions:

1. Beat the egg yolks with the sugar until foamy.
2. Melt the butter being careful not to cook it.
3. Add the butter to the egg mixture and combine well using an electric hand blender. Slowly add the cocoa and the liquor until well incorporated.
4. Break the biscuits in little pieces using a rolling pin or a bottle.
5. Stir the biscuits into the cream mixture using a wooden spoon until perfectly mixed.
6. Place the mixture over a piece of tinfoil and shape it like a salami.
7. Wrap it on both sides and refrigerate until hard. Present it on a serving dish and slice it just as you would with salami.

Notes:
*If you are worried about the health risks from eating uncooked eggs I suggest that you ask your grocer for pasteurized eggs. I know that in the U.S. you can purchase them in a carton.

Hi! My 12 yr old would like to make the choc. salami.
We are unclear on putting the mixture on the foil.

Do you put on the foil and roll the mixture up in side like a yodel?
Can you give her step by step instrucion.
    Thanks so much!

@Jenine: I mix all the ingredients in a bowl. I lay the foil on the table and then I add the mixture.
I shape it into a roll using my hands. To avoid it sticking to my hands wet them with water before starting.
When the roll is shaped I wrap it with foil and set in the refrigerator.

    Hello Patty
I’m looking for an Italian inspired dish for my daughter to take to her Girl Guide Unit here in Australia, this chocolate looks perfect. Can you please tell me approximately how many this serves? I wonder if I shold make a few?
    Thanks very much,
    Anna

@Anna the salami is not that big, about 20-25 slices depending how thick you slice it. My advise is to count at least 2 slices per person.
