Coconut Balls - Palline al cocco

If you like coconut this is the cookie for you.
Ingredients:
3 eggs*
3 cups dry shredded coconut
3-1/2 cups crushed graham crackers
1 cup butter
1-1/2 cups sugar
1/3 cup un-sweetened cocoa
1 Tbsp. Rum
Instructions:
1. In a large bowl mix the butter and sugar together. They need to be well blended.
2. Add one egg at a time mixing well between each.
3. Now add the cacao, coconut and rum mixing well.
4. Lastly add the crushed graham crackers and mix until all it is all well combined.
5. Roll into balls and refrigerate for at least one hour before serving.

Notes:
When serving you can sprinkle them with coconut, or even better yet roll them in coconut before refrigerating them. Of course if you have concerns about using Rum just omit it.
*If you are worried about the health risks from eating uncooked eggs I suggest that you ask your grocer for pasteurized eggs. I know that in the U.S. and Canada you can purchase them in a carton.
