Pasta with oil and red hot pepper – Pasta con olio e peperoncino



This is the recipe I use most often for pasta. It’s really easy fast and flavorful. It’s the perfect recipe when you don’t have time to cook. Use the best ingredients and this dish won’t let you down. Optionally you can add a sprinkle of dry oregano too.

Ingredients:

1 lb. pasta short pasta
extra virgin olive oil
ground red hot pepper
freshly ground Italian Parmesan cheese

Instructions:

1. Prepare the pasta as directed.
2. While the pasta is cooking prepare the other ingredients.
3. Once the pasta is ready drain it well and then mix in olive oil. Use enough to keep it from sticking and give it flavor, in most cases 2 to 4 Tbsp. will do.
4. Now sprinkle it with the red hot pepper and add as much as you like. Some people make it very light and others like to make it really hot.
5. Serve hot with some freshly grated Parmesan cheese on top.
