Pinzimonio



This is what comes to mind when one talks about dipping oil. Pinzimonio is an oil preparation we use for dipping raw vegetables. It takes just a few minutes to make and it’s very good. I serve it with a varieties of fresh vegetables cut in strips such as carrots, celery, red or yellow bell peppers, fennel, raw zucchini, cauliflower but you can choose the vegetables you prefer.

Ingredients:

1/2 cup extra virgin olive oil
3 Tbsp. fresh squeezed lemon juice
1/2 tsp. salt
a pinch of black pepper (optional)
fresh vegetables

Instructions:

1. Prepare your vegetables by cleaning and cutting them into shapes and sizes of your preference.
2. In a bowl beat the oil and lemon juice with a fork until they have combined well. It shouldn’t take more than a minute or two.
3. Beat in the salt.
4. Place in a small serving bowls and serve with the vegetables.
