Pizzette
This is an easy to make appetizer that is always a hit. It uses puff pastry for the dough so as to give this appetizer a more delicate consistency compared to the normal pizza dough.
I prepare pizzette very often for my guests and they always think that I bought them. The secret is to use good quality ingredients and extra care while assembling them. Be careful not to add too much tomato sauce or cheese otherwise they can become soggy or the cheese will run out and burn easily.
This is a good recipe to make with your kids or for kids, I’m sure they’ll love it.
Ingredients:
1 8oz. sheet Puff pastry
about a 1/2 cup natural Tomato sauce with no citric acid added
mozzarella
oregano
extra virgin Olive oil
salt
This recipe makes about 20 pizzette
Instructions:
1. Thaw the Puff Pastry and put it on a cutting board.
2. Prepare a baking sheet with oven paper.
3. Cut the Puff pastry into circles using a small drinking glass (approximately 2-1/2 ” in diameter) or a round cookie cutter.
4. Put the pastry disks on the baking sheet and add one really small spoon of tomato sauce (about a 1/8 to 1/4 tsp.). The sauce should not be so much that covers the borders. It should stay in the middle without running off.
5. Add a small piece of mozzarella to each one. Then sprinkle with oregano, a tiny bit of salt and add a few drops of extra virgin olive oil.
6. Put in a preheated oven and bake for 10 – 15 minutes at 400° or until done.
7. Place them on a serving dish in the middle of the table and watch how fast they disappear.

How much of this recipe can I prepare ahead of time? Can this be prepared (up to the step of baking them) 2 – 3 hours ahead of time and then bake them when the guests arrive. How thick of a piece of mozz should I use – can you give me some general dimensions? :)

@Julie: I always prepare them at the moment because I like to serve them warm, but you can bake them one hour ahead of time and cover them with a kitchen towel. They’ll be just fine.
