Savory Cabbage Soup – Verzata
This is a tasty soup that will warm up a cool winter evening. It has a has a lot of cabbage and not as much liquid as you might expect in a soup. My mom told me that when she was little and you had the flu they used to prepare rice and savory cabbage soup to make you feel better. I don’t know if it worked but it certainly makes you feel warm and cozy after you finish it.
Ingredients:
2 lbs. savory cabbage
1 white onion
2 leaves of sage
1 carrot shredded
1 stalk celery minced
1 clove garlic minced
1 Tbsp. fresh chopped Italian parsley
4 Tbsp. olive oil
3 quarts vegetable broth
pinch of pepper
salt to taste
Instructions:
1. Mince the onion and sage and sauté them in a large pot with the olive oil.
2. After the onions have softened up add the parsley, the carrot, celery and the garlic clove.
3. Continue to sauté them for another 5 to 10 minutes.
4. Add the hot vegetable broth, cover and boil for 10 minutes.
5. Meanwhile cut the cabbage into strips about 1/4 inch wide.
6. Add them to the pot and boil gently for 30 minutes or until tender.
7. While they are cooking salt to taste and add a pinch of pepper.
