Tomato Bruschetta – Bruschetta al pomodoro



This is a nice twist on the classic Garlic Bruschetta. It’s a refreshing appetizer especially during the summer season. You can prepare bruschette as a side dish for your barbecues, it’ll be a hit for sure and you can snack on them while you’re grilling.

Ingredients:

4 slices of Toscano bread (1/2 inch thick and about 10 inches long)
garlic cloves
extra virgin olive oil
2 cups fresh tomatoes cubed or a whole can tomatoes cut in pieces
2 tsp. dry oregano
2 tsp. finely chopped fresh basil
salt to taste

Instructions:

1. Toast the slices of bread on a grill or in the oven.
2. In the meantime mix the tomatoes with 1 Tbsp. olive oil, salt to taste, then add the basil and the oregano. Let it stand for few minutes.
3. When the bread is ready rub each slice with a clove of garlic and then brush them with olive oil. (about 2 tsp. per slice).
4. Spread the tomatoes in equal part on the toasted bread.
5. Serve hot.

Notes:

Toscano bread is a relatively hard salt free bread if you don’t find it try Pugliese bread or whatever is available in your store that has similar characteristics.
