Tomatoes and arugula salad – Insalata di pomodori e rucola
In the North of Italy this is a classic during the summer.
Ingredients:
6 medium size ripe tomatoes
1 to 2 Tbsp. finely chopped wild arugula
2 Tbsp. extra virgin olive oil
sea salt to taste
Instructions:
1. Wash the tomatoes and slice them.
2. In a bowl combine the tomatoes with all the other ingredients and serve.
