Cristina, you can use baking powder and baking soda like in my recipe. I don’t know about self raising flour I actually never used it, but if you try it please let me know how it comes out.

Another great cake! I used to make an all-in-one, chuck it in and whisk, recipe with only two eggs, 1 yogurt, 4 flour, 2 sugar, 1 veg oil, 1/2 sachet yeast for cakes, pinch of salt and grated rind of one lemon. Grease and flour tin, bake at 180/200 for half an hour and test. Problem though is I can't find the yeast for cakes in the Uk! Can I use self raising flour instead and do I need more? Advice please.

This is a great cake; my Italian mother-in-law makes a very similar one. I use the same recipe as you, Patty, except I replace one of the yogurt containers of flour with almond flour. (So 2 tubs 00 flour, 1 tub almond flour.) Also, I rub between my fingers some of the sugar with the lemon zest to release the aromatic oils. It really makes a difference in the lemon flavor, and the almond flour adds an extra moist character to the final result. We eat it plain for breakfast or with coffee in the afternoon, but sometimes it's nice to spread it with lemon curd or marmalade.

Dear Michael and Gigliola,
I'm really glad you liked it. Last time I made it I cut the cake in two, I added some sweetened strawberries cut in chunks and then I added ricotta cream. It was simply delicious. Whipped cream would be good too.

This Yogurt Cake is now one of our favorites. Its so easy to make and always gets compliments when Gigliola serves it. We like to include strawberries or blueberries with it. Thanks for putting it up on your site.
