my quick Italian menus

My other menus are for when you have guest or time to prepare a big meal. However, that's not always the case. If you don't have a lot of time on your hands don't run to the freezer and take out a frozen dinner to microwave! It only takes a few minutes to put something better on the table and what a difference in flavor.

Here are my first three proposals for a quick and light lunch or dinner:

  • quick menu 1, One of my frittata recipes with a tossed salad and peaches and wine.
  • quick menu 2, Tomato Bruschetta and Pasta with garlic.
  • quick menu 3, Veal Scaloppine with zucchini a piece of bread and fresh fruit.

    Another way to put dinner on the table quickly is to prepare sauces in advance. You can freeze them and then take them out when you need them saving time. Click here for more information.
  • Did you know that you can freeze gnocchi too? Just prepare them as directed and then place them on floured trays and set them in the freezer. Once they are frozen you can transfer them into plastic freezer bags. Now when you want gnocchi all you have to do is take them out and drop them into the boiling water. Just remember that yo don't have to thaw them otherwise they turn to mush. Straight from the freezer to boiling water!
