Pinzimonio

Pinzimonio

This is what comes to mind when one talks about dipping oil. Pinzimonio is an oil we use for dipping raw vegetables. It takes just a few minutes to make and it's very good.

Ingredients:

1/2 cup extra virgin olive oil
3 Tbsp. fresh squeezed lemon juice
1/2 tsp. salt
fresh vegetables


Instructions:

1. Prepare your vegetables by cleaning and cutting them into shapes and sizes of your preference.
2. In a bowl beat the oil and lemon juice with a fork until they have combined well. It shouldn't take more than a minute or two.
3. Beat in the salt.
4. Place in a small serving bowls and serve with the vegetables.

Notes:

You can experiment with this as it is a base recipe. Other ingredients you might want to add to the pinzimonio are; garlic, black pepper, red hot pepper or origano. When I made it for the pictures I added a pinch of black pepper.

Use whatever fresh vegetables you prefer. This time I used, carrots, celery, cauliflower and fennel. Raw zucchini are terrific too
