Cod Fish with Arugula

This recipe is a tasty way to serve cod fish.

Ingredients:

2 lbs. cleaned fresh or frozen cod fish
2 lemons
1 bay leaf
5 cups fresh arugula
2 cloves garlic
1/2 cup and 2 Tbsp. extra virgin olive oil
salt and pepper to taste


Instructions:

1. Prepare the sauce by first finely chopping the arugula and the garlic.
2. Now in a bowl combine the olive oil, the juice from two lemons, salt and pepper. Just beat it with a fork as you would an egg.
3. Now mix in the arugula and garlic.
4. Let the sauce cool in the refrigerator while you prepare the fish.
5. Boil or steam the cod fish with a slice of lemon and a bay leaf until done.
6. When the fish is cooked drain it well and lay it on a serving platter and let it cool for about 10 minutes.
7. Spread the sauce evenly over the fish and serve.

Notes:

The lemon juice should be about 6 Tbsp.
