Cod Fish Salad
This recipe is an excellent recipe for baking cod fish fillets.
1 lb. cleaned cod fish (fresh or frozen)
2 medium potatoes
1 Tbsp. fresh chopped Italian parsley
3 Tbsp. extra virgin olive oil
salt and pepper to taste
1 lemon
1. In a pan boil the cod fish with the lemon sliced in two.
2. In another pan boil the potatoes whole in salted water.
3. When the cod fish is cooked remove it from the water, cut into smaller pieces and put it in a bowl.
4. When the potatoes are cooked remove them from the water and peel them. You may want to wait until they cool down a bit.
5. Cut the potatoes into small cubes and add them to the fish.
6. Add the parsley and oil mix well and then salt and pepper to taste.
7. Serve when it is still warm.
This is a really simple recipe that makes a good winter salad. It can also be served as an appetizer.
