Pizza with Bell Peppers
The favorite pizza in my family.
Basic pizza dough
The following ingredients are for one pizza, or half the dough
recipe:
3 medium bell peppers (red, green and yellow)
2 cups chopped canned tomatoes + 2 Tbsp. tomato juice
1 large white onion
4 Tbsp. extra virgin olive oil
1 cup Italian mozzarella
1/2 tsp. dry oregano
1/2 tsp. salt
olive oil to grease
1. Slice the onion very thinly.
2. In a large sauce pan over medium heat, sautee onions in 3 Tbsp. oil until tender.
3. Meanwhile clean the bell peppers and cut them in slices 1/2 inch wide.
4. Combine the peppers with the onion and cook them for about 30 minutes or until tender. Salt to taste.
5. Preheat the oven to 450°.
6. Grease a baking sheet approximately 15 " X 11" with olive oil. I use a regular rectangular baking sheet, but if you want to use a round pan the equivalent should be about a 14" pizza pan. Then flatten half the dough using your fingers or a rolling pin. It'll be thin as an Italian pizza should be.
7. Mix the canned tomatoes with 1/2 tsp. salt and 1 Tbsp. Oil and spread them over the pizza crust.
8. Bake for about 15 min. and then add the peppers and the oregano. Bake for another 10 minutes, add the mozzarella cut in cubes and bake until done, about 5 minutes.
Notes:
Mozzarella is a very important ingredient to the success of the pizza. The real mozzarella is made from water buffalo milk, but it would probably be too difficult to find. The mozzarella that we commonly use is called "fior di latte" and it is made with whole cow milk. I suggest you to use this if you can't find the real one.
