Tomato salad
Quick and easy salad that is wonderful in the summer when the ingredients are fresh. I learned to prepare this salad in Tropea, a little village in Calabria located in the south of Italy. This area is really famous for its red onions which are known world wide. You can find red onions almost anywhere but none taste like the red onions of Tropea. When I go on vacation in Tropea I always bring back some onions with me.
6 medium size ripe tomatoes
1 clove of garlic
1 tsp. dry oregano
1/4 red onion sliced
6 leaves fresh basil
2 Tbsp. extra virgin olive oil
salt to taste
1. Wash the tomatoes and slice them.
2. Add the garlic chopped finely, the oregano, the thinly sliced onion and the basil leaves sliced thinly. Mix well.
3. Refrigerate for about one hour before serving.
4. Just before serving add the oil and salt and mix well.
