Patate e cipolle
Ingredients:
2 1/2 lbs. medium potatoes
1 lb. white onions
1/4 cup extra virgin olive oil
1 tsp. salt
a pinch of pepper
2 cups water

They take a little time but they are well worth the work!

1. Slice the onions 1/2 inch thick.
2. Peel the potatoes and cut them in quarters.
3. Heat up a large nonstick pan with the olive oil and when it's hot add the onions.
4. Sauté them for about 10 minutes.
5. Add the potatoes and cook them for about 1 hour or until soft, stirring often. When they get too dry add some water a little at a time. The potato are ready when they're soft and the onions are creamy.
6. Serve them hot. They're also good when they're cold.
These can be served as a side dish to pork chops.
